Chymotrypsin is a kind of protease that can preferentially hydrolyze the peptide bond formed of the carboxyl of L-Tyrosine and L-Phenylalanine. The optimum pH is 8. 0～9. 0 for the hydrolysis. The activity of Chymotrypsin can be blocked by heavy metal and other natural trypsin inhibitors to different levels.
