Properties: white powder or granules, easily
soluble in water, water solution is acid, insoluble in ethanol. At
190-204°C it will turn into disodium dihydrogenpyrophosphate. At
204-244°C it will turn into sodium polyphosphate.
Use: In food industry, as quality improver. emulsifying agent, nourishing agent.
