Introduction:
Sodium alginate, also called algin or alginate, is one kind of natural polysaccharide carbohydrate extracted from seaweed.
Property:
 
As the hydrophilic gel, sodium alginate is the prevailing salt of algin, which is apt to from thick solutions(RE. the prevailing salt of thickness and stability), sodium alginate can be used as thickener and stabilizer in foodstuff, and printing paste, oil-extraction agent etc.
 
Application:
In food industry
Thickening: Salads, pudding, jam, tomato juice, canned products, etc.
Stability: Ice cream, cream and cheese etc.
Hydration: Noodle, vermicelli, bread, confectionery, cool and frozen products etc.
Gelling Property: Frozen foods imitated foods and various gel foods, protective cover for meat, vegetables fruit, and aquatic products etc.
In printing and textile industry
Printing paste: Acted as reactive dye in medium or high end printing
Thickening agent: Used as thickener in printing technology to make a dense cover during drying and raise dyeing
