Alpinia officinarum, in common usage, Galangal. However, name also applied to the bigger size Kaempferia Galanga. Ours is the Small Galangal (A. Officinarum) also known as Kencur, Sand ginger, Aromatic Ginger or Resurrection Lilyalangal. It has many culinary and medicinal uses and often used in South East Asian cuisines. Lesser Galangal or small Galangal was widely used in ancient and medieval Europe and still has a strong living tradition in Estonia, Lithuania and Russia. A. Officinarum has an big aromatic sweet earthy citrus pine flavor complementing to Ginger but not at all peppery.
