L-arabinose is an aldopentose which is more common than D-arabinose in nature. L-arabinose is a Zero-Calorie sweetener and L-arabinose can inhibite the Sucrase, so that the Sucrose can not be broke up into Fructose and Glucose. Therefore, it can prevent fat accumulation and protect against diabetes.
Applications:
- L-arabinose can be used as a sucrose enzyme inhibitor to lower the Glycaemic Index(GI) of sucrose containing products
