Fungal Amylase is produced by submerged fermentation. It can catalyze the hydrolysis of alpha-1,4-glycosidic linkages of starch polysaccharides to yield dextrins, oligosaccharides, maltose and D-glucose. ENOLZYME Fungal Amylase is widely used in brewery and manufacture of alcohol, food processing, feed additives, leather processing, etc.
Unit Definition:
One Amylase unit is defined as the amount of enzyme which hydrolyzes soluble starch and release 10mg reducing sugar per 30 min, at 40 oC and pH5.0.

Function:

ENOLZYME Fungal Amylase has optimum pH between 5.5-9 with activity more than 80%, and best performance at pH9.0.
