NAME: SUGAR ESTERS(SE)
Sucrose ester(SE) White to yellow powder, or colorless to slightly yellow viscous liquid or soft solid, odorless or slightly special smell. Soluble in ethanol, acetone. Single ester soluble in hot water, but two of three esters or ester soluble in water. The monoester content is higher, the stronger the more hydrophilic; two esters and three ester content, dear greasy stronger.
Applications:
Sucrose ester used in beverage, candy, bread, freezing flour products, instant noodles, noodles and a variety of O/W emulsified fat, instant curry powder, meat and fish surimi product, emulsification and curing essence, fruits and vegetables etc.. In fact, sucrose ester series products are used in almost all fatty foods, starchy foods, all kinds of composite additives and drugs, cosmetics.
