Mechanism:
Medium temperature amylase can hydrolyzeα-1.4 glucosidic bond of starch molecules ,and randomly cut into vary
length dextrin mixed short chain and a small amount of low molecular weight carbohydrates, so that the viscosity of
starch paste decreased rapidly, namely "liquefaction" effect, it is also called liquefying enzyme.
