The product is a bacterial amylase preparation derived from bacillus licheniformis extract.It has good tolerance to high
temperature,can widly used in process of starch sugar(Glucose,fructose,maltose,dextrin etc) and monosodium glutamate,
organitic acid and glucoic aci salt series industry.
Mechanism
High temperature α- amylase enzyme is an endonuclease which can rapidly and randomly hydrolysis α-1,4- glucoside
bond into starch and dextrin at a higher temperature, so that the viscosity of gelatinized starch rapidly decrease and the
product was of varying lengths's short chain dextrin and small amount of oligosaccharides.

2.Activity definition:At 70℃ and PH 6.0,1g solid enzyme(or1mlliquid enzyme) liquidize 1mg soluble starch in 1minute , which is one enzyme activity unit,in u/g(u/ml) represent.
Product Features:
1.Temperature range: the effective temperature range is 55-100 ℃, the optimum temperature is 85-97. It still maintain a considerable vitality at100℃, in the jet liquefaction,instantaneous temperature can be up to 105-110 ℃.
2.pH Range: effective pH range is 5.0-8.0, and the optimum pH range is 5.8-6.5.
3.Effect of calcium concentration on enzyme activity: The product of Ca2 + less demanding,50-70ppm Ca2 + is sufficient.
