Maltitol is hydrogenated disaccharide made by the hydrogenated of maltose. It usually appears in the form of crystal or crystalline powder. Its molecular formula is C12H24O11 with relative molecular weight of 344.47 and melting point of 148-151℃. The sweetness of maltiyol is slightly lower than that of cane sugar. It is easily soluble in water and slightly soluble in ethanol. Since its physical and chemical features are close to those of cane sugar, maltitol can replace cane proportion of 1:1 in production without changing the production process. It is a perfect substitute of cane sugar widely used in food, medicine and daily chemical industries.
