Description:
Sinzym INU2000L Is an endo-inulinase enzyme preparation for hydrolysing inulin to produce oligosaccharides and liberate fructose, which is produced by fermentation with a selected strain of a fungus. It also splits terminal fructose units in sucrose and raffinos.
Usage rate:
Normally, the recommended dose is 0.2-0.3% on the weight of inluin. however, it could be optimized in the different material or production process (within a different temperature, pH and processing time). Typically, the recommended dose rate is usually 200-300 ppm on 10% of inulin solution at 55°C and pH 5.0 for 4 hours to get the 95% inversion of the fructo-oligosaccharide
Application range:
Active at proofing temperatures and at temperature up to 50-65°C. Enzyme will be inactivated quickly above 65°C.
