NOVARA Our four wine varietals go through the same integrated and 揾and-crafted?production process which includes the care of the vineyards, the aging of the wines in French Oak as well as its later bottling process. This whole process is done with great care, paying attention to every detail to assure the best quality of wine attainable. Our grapes are hand picked in 20 kg boxes to avoid possible harm to the grape during harvest. The undesired grapes are then carefully separated from the good grapes by hand from a conveyor belt. These selected grapes are then kept in a temperature-controlled room for a period of 48 hours at approximately 8˚C, the ideal temperature for a pre-fermentative maceration. This practice slows down the fermentation process, helping to preserve the flavor of the grape and leading to a better development of the bouquet. The final production process is conducted in a traditional fashion using 10,000 liter stainless steel tanks. The fermentation process is controlled, pumping over and punching down the wine twice a day during the fermentation process and macerating the wine for 30 days with a submerged cap.
